Job Description

Job Summary:

The Head Chef at Kubu Café is responsible for leading the kitchen team, creating high-quality dishes, and ensuring the efficient operation of the kitchen. The ideal candidate is a Zambian national with international culinary experience, who brings a blend of local and global cuisine expertise. The Head Chef will be instrumental in menu development, staff training, maintaining kitchen hygiene standards, and ensuring customer satisfaction.

Key Responsibilities:

Menu Development:

– Design and develop innovative menus that reflect both local and international culinary trends.

– Create seasonal and special event menus.

– Ensure menu items are cost-effective and appealing to customers.

– Incorporate feedback to continually improve the menu offerings.

Kitchen Management:

– Oversee daily kitchen operations to ensure efficiency and productivity.

– Maintain high standards of food quality, preparation, and presentation.

– Manage kitchen inventory, order supplies, and coordinate with suppliers.

– Ensure compliance with health, safety, and hygiene regulations.

Staff Management:

– Recruit, train, and mentor kitchen staff.

– Schedule shifts and assign tasks to ensure smooth kitchen operations.

– Monitor staff performance and provide constructive feedback.

– Foster a positive and collaborative kitchen environment.

Quality Control:

– Ensure all dishes meet Kubu Café’s quality standards.

– Conduct regular taste tests and quality checks.

– Address any issues related to food quality or presentation promptly.

– Implement and maintain portion control and waste management procedures.

Customer Satisfaction:

– Ensure all food served meets customer expectations and dietary requirements.

– Handle customer feedback and complaints related to food quality.

– Work closely with the front-of-house team to ensure seamless service.

Financial Management:

– Assist in managing the kitchen’s budget and financial performance.

– Monitor food costs and implement cost-control measures.

– Prepare reports on kitchen performance and expenditures.

– Identify opportunities for cost savings without compromising quality.

Innovation and Trends:

– Stay updated on culinary trends and incorporate them into the menu.

– Experiment with new recipes and cooking techniques.

– Participate in culinary events and competitions to promote Kubu Café.

Team Collaboration:

– Work closely with the General Manager and other team members to achieve business goals.

– Participate in management meetings and contribute ideas for improvement.

– Foster a culture of continuous learning and improvement in the kitchen.

Qualifications:

– Proven experience as a Head Chef or similar role in a high-volume kitchen.

– International culinary experience and knowledge of global cuisine.

– Strong leadership and management skills.

– Excellent communication and interpersonal skills.

– Ability to work effectively in a fast-paced environment.

– Strong organizational and multitasking abilities.

– Culinary degree or equivalent training and certification.

– Passion for cooking and creativity in menu development.

Working Conditions:

– Flexibility to work various shifts, including evenings, weekends, and holidays.

– Ability to stand for extended periods and perform physical tasks such as lifting and moving heavy items.
